A traditional Chinese dish made with bean thread noodles.

Ingredients

  • ¼ lb. dried bean thread noodles or extra thin rice or shirataki noodles

  • 2 teaspoons cold pressed sesame oil

  • 3 tablespoons avocado oil

  • 4 oz. ground bison, beef, or pork (pork is traditional)

  • 4 cloves garlic, minced

  • 1 3" piece ginger, peeled and minced

  • 3 tablespoons Chinese red chile bean paste)

  • 2 tablespoons tamari sauce

  • 3 teaspoons Chinese rice wine

  • 1½ cups chicken stock

  • 3 green onions, thinly sliced

  • Juice of half a lemon or lime

Instructions

  1. Place noodles and 4 cups boiling water in a bowl; let sit until soft, about 4 minutes. Drain and toss noodles with sesame oil; set aside.

  2. Heat avocado oil in a 14" flat-bottomed wok or large skillet over medium-high heat. Add ground meat, and cook until browned, 5–7 minutes. Add garlic and ginger; cook, until fragrant, about 1 minute. Add chili paste, soy sauce, wine, and stock; bring to a boil. Add noodles and stir occasionally until liquid is reduced by half, 8–10 minutes more. Add chives and lemon juice just before serving
