Chocolate Pudding

Ingredients
One 3.5 ounce 70% dark chocolate bar
3 tablespoons coconut sugar
1 cup of coconut milk (from a carton, not a can)
1 tablespoon organic cornstarch or 2 tablespoons tapioca starch
1 teaspoon of vanilla extract
A pinch of pink Himalayan or Celtic sea salt
Instructions
Melt chocolate in a stainless steel saucepan over medium heat.
In a separate bowl whisk together coconut milk and starch.
When chocolate is melted and smooth, whisk in coconut milk mixture.
Whisk in coconut sugar and add a pinch of salt. Wisk continuously until mixture comes to a full simmer. Remove from heat, whisk in vanilla extract.
Allow pudding to cool slightly before straining through a mesh sieve (to remove starchy lumps) and into a a glass storage container. Chill until fully set.
Notes:
Cool to room temperature and spoon into silicon popsicle molds. Move to the freezer. Makes great pudding pops. Can also be used as a pie filling.
