Cinnamon Banana Bread
Rustic Banana Bread is gluten free and takes 10 minutes to prepare.

Ingredients
3 medium, ripe bananas (1.5 cups mashed)
2.5 cups blanched almond flour
1/4 cup rolled oats milled into flour (I suggest sprouted, organic oats)
3 eggs
2 tablespoons of coconut milk
1/3 cup nuts (hazelnuts, almonds, pecans, etc.)
1 teaspoon baking soda
1/2 a teaspoon salt
2 teaspoons vanilla extract
3 teaspoons cinnamon
Mini chocolate chips (optional)
Instructions
Preheat oven to 350 degrees.
Line a standard sized loaf pan with parchment paper. Set aside
Grind oats in food processor to a course flour.
Combine almond flour, oat flour, baking soda, cinnamon to a large mixing bowl, set aside.
Puree bananas in a food processor until smooth.
While food processor is running add eggs one at a time to banana puree. Beat for 2-3 minutes.
While food processor is running add salt, coconut milk, and vanilla to the banana mixture.
Combine banana batter to flour mixture. Stir to combine.
Fold in nuts.
Pour batter into lined loaf pan. Sprinkle with chocolate chips if using.
Bake for 1 hour or until toothpick comes out clean from center. Allow to rest for 1 hour before serving.
