Grain Free Chocolate Chip Cookies

Simple and low sugar. Plus there's room to increase the nutritional impact without compromising on texture.

Serves: 32 large cookies

Ingredients

  • ½ cup coconut sugar

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 4 ounces unsalted butter, at room temperature

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 4 cups almond flour, blanched or raw

  • 1 cup semi-sweet or dark chocolate chips

  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F.

  2. Line 2 or more cookie sheets with parchment paper.

  3. Using a food processor or stand mixer beat sugar and butter together. Add eggs one at a time. Add vanilla. Blend for 1-2 minutes.

  4. In a separate bowl combine almond flour baking soda, and salt. Incorporate wet ingredients into dry, stirring until well combined.

  5. Stir in the chocolate chips and nuts.

  6. Drop spoonfuls of dough onto prepared baking sheets. Twelve cookies per sheet.

  7. Dip a spoon into water and gently flatten the cookies for more even baking.

  8. Bake the cookies for 10 to 12 minutes or until golden brown.

  9. Allow cookies to cool on the pan for 2-5 minutes before transferring to a cooling rack.

Notes

An optional way to boost these cookies with protein and fiber will also make a slightly chewier texture.
