Overnight Oats

Soaking grains makes them easier to digest and nutrients more available.

Serves: 1

Ingredients

  • 1 cup of organic steel cut oats

  • 3 cups of purified water

  • 1 teaspoon of sea salt

  • 1 tablespoon of raw apple cider vinegar

  • 2 tablespoons of grassfed butter or coconut oil

  • Chicory root sweetener and real maple syrup to taste

  • 1/2 cup seasonal, organic fruit, nuts, etc.

Instructions

  1. Add oats to 1 quart bowl. Add water, salt, and ACV, stir, cover. Leave overnight or up to 2 days.

  2. Drain soaked oats through a mesh sieve over cool water until water runs clear. Transfer to a medium sized saucepan. Add just enough water or coconut water to cover the oats. Add a pinch of salt. Bring to a simmer over medium heat. Stir oatmeal occasionally until all the water is absorbed and oat begin clinging to the bottom of the saucepan. Remove from heat.

  3. Add butter and stir to loosen up the oatmeal and butter is fully incorporated. Add sweetener and toppings to taste.

    Notes

    Increase the resistance starch and lower the glycemic load by making in advance and bringing to room temperature before storing in the fridge. Enjoy cold.
