Oven Roasted Salmon
Defrosting frozen salmon filets under a drizzle of room temperature water takes about 20 minutes. You can also move frozen filets to the fridge a day or 2 before cooking.
Preparing individual 8 ounce fillets of fish takes no more than 10 minutes in the oven. This is a very easy and super fast way to make weeknight meals in minutes.
Ingredients
2 fillets of wild salmon or cod (6-8oz each)
grass-fed ghee or extra virgin coconut oil for brushing
salt and pepper to taste
Instructions
Preheat the oven 450◦
Use a broiler pan or line a cookie sheet with aluminum foil and place a cooling rack on top of it. Brush salmon filet on both sides with oil and place on rack. Season with salt and pepper. Bake in the oven for 10-12 minutes. Allow to rest for 5-10 minutes before eating.
