Super Immunity Soup

This is a great recipe while on a cleanse and satiating enough for dinner. It's delicious slightly warm or at room temperature.

Ingredients

  • 2 cups kale, spinach, and/or mixed herbs (cilantro, parsley, etc)

  • 1 cup organic chicken, turkey, or duck stock or vegetable broth (homemade is best)

  • ⅛ of a cup of any variety of onion or one whole shallot

  • ½ clove of garlic

  • ½ of a large avocado

  • 1 tablespoon of white miso paste

  • 1 tablespoon of extra virgin olive oil (optional)

  • Juice of 1 lemon

Instructions

  1. Blend all ingredients except the miso together in a vitamix, food processor, or blender for until smooth and bright green. Add miso and warm over low heat on the stove top. Do not bring to a simmer.

Notes

Substitute 1 tablespoon of organic, plain, whole milk yogurt for the avocado and/or add a half of a small cucumber and serve cold as a gazpacho.

This is soup is best served raw, slightly warm. Overheating or cooking this soup will change the texture, and will destroy the nutrients as well as the live cultures in the miso.

You can allow your vitamix to heat the soup. Blend on the high setting for 3-5 minutes. This method prevents the soup from overcooking.
