Vegan Walnut Tacos

Yields: 2 cups

Ingredients

  • 2 cups of raw walnuts, covered with water and soaked overnight

  • 3.5 ounce can of green chilies or 1/3 cup salsa

  • 3 green onions

  • 1 tablespoon Annie’s Worcestershire Sauce

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1/4-1/2 teaspoon salt to taste

  • Juice from 1/2 a lime

    Instructions

  • Cover raw walnuts with water and pinch of salt. Soak overnight.

  • In a food processor combine soaked and drained walnuts with remaining ingredients.

  • Pulse nut mixture until it’s the consistency of cooked ground beef. Be careful not to over blend.

  • Let stand about 30 minutes for flavors to blend before serving or storing in the fridge.

  • Serve with your favorite taco toppings on cassava or almond flour tortillas. Lettuce leaves or rice paper work well too.

Notes:

For more flavor, drain walnuts of water after 4ish hours of soaking and cover with vegetable or mushroom broth for the remaining soak time. Drain through a sieve or colander.

Two tablespoons per serving will yield 8 tacos.
